I’m a big fan of baked porridge. For one thing you don’t have to stand over the stove making sure it doesn’t stick to the bottom of the pan. They also seem to absorb the flavours of whatever you’ve added in a whole new way during that time in the oven. This porridge won’t be a favourite of all – but if you’re a ginger fan you’ll love it. It’s pretty rich, the yoghurt and grated apple are excellent additions to freshen it all up a bit. I used cream instead of marscapone just because it was in the fridge and I added a drizzle of maple syrup as I ate it due to the pretty full on ginger kick. The recipe is from Apples Under My Bed. If you don’t have much time in the mornings, you can make it all up the night before and just bake it in the morning – easy!
